Stuffed Snickerdoodles

Have you ever heard of the Pillsbury Million Dollar Double-Delight Peanut Butter Cookie? Someone won ONE MILLION dollars for this recipe. Click on the link above, you will see that it is fairly basic. I was extremely cynical and skeptical about this cookie - how can it be worth that much prize money?? That was before I made it. Um, make it. It's worth every penny.

It even inspired me to try different variations of a stuffed cookie, and lately I've been craving Snickerdoodles. If I started a band, I think that's what I would name it. I stuffed this cookie with a cream cheese, powdered sugar, cinnamon mixture - it tasted like frosting. Okay, I won't ask for one million dollars for these, but if someone wouldn't mind writing me a check for $10,000... thanks.


Stuffed Snickerdoodles
(Makes 12-16 cookies)

1 pkg Pillsbury Sugar Cookie Dough, chilled
1/2 cup softened cream cheese
3/4 cup powdered sugar
1 1/2 tsp cinnamon
1/4 cup sugar

Preheat oven to 375. In a small bowl, mix sugar and 1/2 tsp of the cinnamon. Save for later. In a medium bowl, combine cream cheese, powdered sugar and the remaining 1 tsp cinnamon. Stir until smooth. Chill in freezer for 30 minutes.



Slice cookie dough log into desired amount of cookies - I did 12. Take one slice and remove a small amount of the dough, set aside. Create a well for cream cheese stuffing. Scoop small amount, about 1/2 tsp, of stuffing into cookie.


Cover stuffing with extra reserved dough and smooth with fingers. Place on baking sheet lined with parchment paper and sprinkle with cinnamon sugar.


Bake for 8-10 minutes. Let cool before removing from baking sheet.

  3. I just got back from vacation (with a dial-up, so no checking blogs for six days) and ate WAY too much food. Back on Weight Watchers this morning, and now see THIS?! Oh, bookmarked cookies, I look forward to having you in July after I loose these 15 pounds.


    No, I didn't gain 15 pounds in 6 days on vacation. Though it feels like it.

    Just made these. Mine came out really flat. Is that normal? They are yummy though!

  5. Mine were pretty flat too, as you can see from the pictures. I think that's unavoidable because of the store bought cookie dough?
