Smoked Salmon, Leek & Goat Cheese Scramble


I love breakfast for dinner. It sort of flips your day upside down, doesn't it? And drinking wine with scrambled eggs is a real treat. (At night. Not in the morning. That's a real problem.)

The following combo works so well together... leeks, dill, smoked salmon and goat cheese. Flavors that compliment each other perfectly. Last night I scrambled them up, and here you have it...

Smoked Salmon, Leek & Goat Cheese Scramble
(Serves 2-4)

4 eggs
2 egg whites
2 T cream or milk
1 T chopped dill
2 T unsalted butter
1 leek, white parts only, chopped
4 oz. smoked salmon
Goat cheese
Salt and pepper


Chop leeks and place in bowl of cold water to clean.


Roughly chop smoked salmon.


Melt butter in saute pan. Add leeks and saute for 5-6 minutes, until soft and fragrant.


Crack eggs and egg whites into bowl. Whisk together with cream and dill.


Add to leeks and let sit for a minute. Then start to stir with spatula. I don't like to over-scramble my eggs because I like them chunkier, so I don't over-stir. Add goat cheese by 1/2 teaspoons, however much you like. Season with salt and pepper.


Add smoked salmon and continue to scramble until cooked.


I served with sliced tomatoes, toast and a salad. If you're feeling really wild you could make Bloody Mary's too! There's never a wrong time in the day for those. And finally, dinner for breakfast...
