Sirious Experiment #2: Chocolate Peanut Butter Crunchy Oat Clusters

With this "Sirious Experiment" I was attempting to come up with a recipe for Granola Bars. However, when you think of a granola bar, you think healthy snack... right? Yeah well, in this recipe, when the sugar and the butter and the chocolate and the peanut butter turned into a creamy goo of joyful lusciousness I decided... not a granola bar. Something else, something with a really long title: Chocolate Peanut Butter Crunchy Oat Clusters. Do not let me confuse you - these are not a healthy snack but they are goooood.


Chocolate Peanut Butter Crunchy Oat Clusters
(Makes 24)

2 cups oats
1 cup slivered almonds
1/4 cup unsalted butter
1/3 cup honey
1/4 cup brown sugar
1/2 cup creamy peanut butter
1 tsp vanilla
1/4 tsp almond extract
1/2 tsp cinnamon
1 cup mini chocolate chips


Preheat oven to 325. Spread out oats and almonds on a baking sheet. Like so!


Toast in oven for 10-15 minutes. You will know they are done when you can smell them. Or when they turn golden. Turn down oven temp to 300.


In a saucepan, melt butter over medium heat.


Add honey, brown sugar, peanut butter, vanilla, almond extract and cinnamon and whisk until creamy.


Combine oats/almonds and mini chocolate chips in a bowl.


Pour peanut butter mixture over oats and stir.


Grease or spray mini muffin tins. Spoon chocolate oats into each tin.


Bake for 10 minutes. The End!


By the way, I bought 250 of those plastic to-go containers for next to nothing. They're amazing! Makes it so easy to give your baked goods AWAY. So they're not sitting on your COUNTER. For you TO EAT.

  1. I'm laying in bed blogging and watching the office. My boyfriend looked over and saw your post. He started whining like a baby and reaching at the screen. He wants these bad. They do look good. We love peanut butter. Very creative!!!
