Transformer Red Velvet Cake

If you've been following my blog from the very beginning, then you know that every year on my son's birthday I obsess over his birthday cake. It all began with a Rainbow which was followed by Brobee and, even though it wasn't my son's birthday, let's not forget Wubbzy. It brings me joy and pride and usually a meltdown or two. Not a toddler meltdown, a mommy meltdown, but would a cake even taste good if it wasn't baked with sweat and tears?? Probably. Probably better.

Age 3 is all about Transformers for Jack. And rather than stress myself beyond belief trying to turn a cake into a robot, I thought I'd keep it simple this year. Simple recipe and simple design...

Red velvet cake and blue frosting to replicate the colors of OPTIMUS PRIME. Felt like shouting there.

I made my own edible cake topper, similar to ones seen here and here. Very simple to do, as long as you're okay with TMJ-inducing "I'm-concentrating-too-hard" panic attacks. I like to use candy melts because they come in so many colors, but you could also melt white chocolate and dye it yourself. I always prefer the double broiler melting method (place a heat-proof bowl over a pot of simmering water, making sure liquid is not touching bottom of bowl, and stir constantly)...

I found a Transformer logo online and printed it out, then placed clear parchment paper on top and taped both pieces to my cutting board. I placed my melted candy in a plastic bag and cut just a TINY piece of the end off. The smaller the better! Start by outlining your image and then use the back of a spoon to help you to smooth out the middle.

I melted some white chocolate to fill in the spots that needed it, and so that it could be peeled off as one, cohesive piece once it hardened.

Make sure you let it harden completely, and then place atop your cake! Oops, mine was a little big. Oops, it didn't matter. I thought the mini M&M's were a nice touch for a child's cake, until Jack kept going over when no one was looking and eating them.

Oh well, it was his birthday after all. And I kept eating them too.

HAPPY BIRTHDAY TO MY LITTLE MAN!!

Thank you for allowing me to shout because Jackson James turns 3 today! Last night we kicked off the celebration with my mom and sister (Gigi and Auntie Hannah) at this wonderful restaurant and came home to share this wonderfully tiny cake! You bake it in an empty can! Exclamation!!

When I came across the idea/recipe on this superb blog, I couldn't wait to make it. And that's the genius in it... you don't have to wait. It takes 5 minutes to prep, less than 30 to bake, you're certain to have all the ingredients in your pantry and can you say, PERFECT little portion?? I'm telling you, this will change my life. Any occasion will become a Mini Cake Night occasion.

Meyer Lemon Pudding Cake

A friend recently stopped over with a bag of fresh meyer lemons from her garden along with this recipe printed out for me. I'm telling you, people, THAT'S how you get me to make something. Send me ingredients and a recipe and I won't even think twice. HINT HINT *SEND ME THINGS*

I kid, no I don't.

If you like lemons, this is the most lemony of the lemony-est desserts. Rich and moist and bright and fresh and BURSTING WITH LEMON FLAVOR. I didn't have ice cream or whipped cream but I think it would compliment the cake nicely. Next time!

I think I could have cooked mine for 5 more minutes, but I didn't complain about the ooey gooey-ness.

It is pudding cake after all!

Egg Salad Sandwich

This is a lunch I make quite often for myself and have since I was a kid. That egg slicer thingy was one of the first tools I was trusted with in the kitchen, and, as the circle of life goes, now my son is old enough to use it. Is that what it's called? No matter! Just like Simba taught his lion cub to call hyenas "Whoopi Goldberg" I will teach my son that this is called an egg slicer thingy.

Anyhowzers, I don't get very fancy with my egg salad. Some people like to add celery or pickles or tarragon or herbs, but I like mine nice and plain. I boil eggs, peel and chop them, add mayonnaise, a few squirts of dijon mustard, pepper, sea salt and a dash of seasoned salt as well.

I eat it with crackers, or roll it up in a wrap, spread it on toast, or make an old fashioned sandwich, like the one below. I tried to add broiled pancetta to this, but instead burnt the crap out of it. There may have been a small meltdown that followed ("my bacon waaaaaaaaaaaaaaah") but the sandwich made it all better.

Cheesy Avocado Toast

I wanted something different for breakfast this morning. Something in this vein, but with cheese. A breakfast inspired by my mom, who eats something similar for lunch everyday.

Sourdough bread (wheat sourdough, I might add), a drizzle of good olive oil, spread avocado, a splash of fresh lemon juice and a sprinkle of sea salt...

...topped with reduced fat provolone cheese and red pepper flakes. Broiled for a few minutes until cheese gets all bubbly...

I love cleaning out my fridge and coming up with a meal when at first glance I think I have nothing to work with. Tonight, I made this pea pesto, sautéed a bunch of vegetables in a little olive oil with garlic, basil and red pepper flakes, made some whole wheat rotini and tossed it all together... even my 3 year-old (yup he's 3 in two weeks) ate it up (well, minus some of the vegetables). Success!

Lemon Poppy Seed Muffins with a Lemon Glaze

My sister moved back to LA! Yay! She moved to Chicago back in June, but now she's back! My mom made the road trip out west with her, and they just arrived last night : )

When I have guests in the house, it pleases me that they wake up in the morning to something freshly baked. Because that is what it's like to stay with Ina. (I imagine.) You wake up, and she's wearing the most perfect pajamas, her house smells like fresh cut flowers that she fetched from her garden that morning, she's effortlessly squeezing orange juice for Mimosas, and she offers you a giant muffin or scone or fried egg sandwich. One day, Ina, one day we'll be together like that.

I decided to top them with a glaze, because, why wouldn't I? I took about a cup of powdered sugar and whisked it together with 2 T of freshly squeezed lemon juice. As soon as they came out of the oven I spooned the glaze on top of each muffin...

When you are not in my freezer (like right now because I used you up making these delicious cheese straws), I feel like something is missing inside. Inside of my freezer. I worry that an impromptu party may break out at any time and I will be left without your go-to convenience and deliciousness.

Orange Sugar Cookies with Orange Icing

Here's how conversations work in my house...

Me: I'm making Oscar cookies.

Carson: Why? We're not having a party.

Me: I know.

Carson: Please don't make them.

Me: I will.

And I do. And I did. But I had these edible glitter stars which were just perfectly festive and appropriate and begging to be used. I don't need to justify myself to you, right? You get me, don't you? Also, when you get it in your head that a fresh orange sugar cookie with zest and juice and extract might be marvelous, you owe it to yourself to find out. It was.

Orange Sugar Cookies with Orange Icing

(Makes 18 cookies)

Printable recipe

Cookies:

Recipe adapted from Martha Stewart

1 stick unsalted butter, room temp

1 cup sugar

2 large egg yolks

1/2 tsp orange extract

1/2 tsp orange zest

1/2 tsp baking powder

1/2 tsp salt

1 1/2 cups flour

With an electric mixer, cream butter and sugar until combined. Add egg yolks, orange extract and orange zest and mix until smooth. Add baking powder, salt and flour, and mix until a dough forms. It might look crumbly, but it will come together with your hands. Form into a ball and cover in plastic wrap. Let cool in fridge for 15 minutes. Preheat oven to 350. Take chilled dough and form balls (roughly 2 tsp in size), place onto parchment-lined baking sheet. Gently press down with thumb to flatten cookies. Bake for 10 minutes, rotating pan halfway through. Let cool completely before applying icing.

I used this recipe for the icing and only changed it up by adding 1/4 tsp of orange extract.

Shaved Cauliflower and Radicchio Salad

Something happens to me when I hear Rachael Ray say 'EVOO'. Especially because she almost always accompanies the letters by spelling it out for us: Extra Virgin Olive Oil. If the point of saying EVOO is to save precious time, then why elongate the abbreviation???

I'm telling you, something happens to me. My bones start to twitch.

Anyway, the point of all that was not to rant on Ray Ray. I wanted to tell you that we're trying out some new oils in our house! I know, exclamation! Excitement! Avocado oil, grapeseed oil and walnut oil - all clinically proven to lower cholesterol (I'm not a doctor, but I play one on this blog). So I was excited when I found this Shaved Cauliflower and Radicchio Salad that used walnut oil in the dressing. I also love an excuse to use my mandolin because it makes me feel like a super professional chef person.

These aren't the best pictures but this salad was delicious and definitely a nice change from our average green lettuce based side. Great crunchy textures, brightness from some lemon juice and zest and richness from the walnut oil. I also added avocado, the super food. Recipe found here.

Eating Well: Shrimp Stir Fry

I have made plenty of Shrimp Stir Fry recipes on this site (seen here, here and here - sorry for the teeny, tiny pictures), and despite the name, this one is really no healthier than the rest. I adapted the recipe from Eating Well, that's all, hence the name. Are we cool? Super.

But here's what I did differently...

First, I always roast my shrimp in the oven. Toss with some olive oil, salt and pepper, place on a baking sheet, and roast for exactly 5 minutes in a 400 degree oven. Perfect every time.

Second, I came up with my own selection of vegetables: mushrooms, snow peas, red pepper, carrots, yellow cauliflower and bok choy.

Basically, I only used the recipe for the sauce. And it was delicious!

*I know it's been awhile since I've come up with my own recipe, from start to finish, but I'm working on that. An Ultimate Oatmeal Cookie (sans the raisins, those are for toddlers) if you must know. So look forward to that. Also in your future: Black, White and Gold Truffles for the Oscars.

*And this is an aside, but my son is sitting next to me writing a "blog about zoo animals" on his toy computer, he tells me.

We had a lot going on this week and a few dinners out, which means my kitchen was mostly abandoned. So here are a few random thoughts and photos to keep the blog rolling...

Carson took me out for a Valentine's dinner at Melisse. I died. We both agreed it was probably the best meal that has ever passed our lips. The photo above was just one of the many courses, a soft poached egg with caviar and puff pastry. Paired with some ridiculous champagne to wash it down.

Beacoup bucks, but worth it on a special, SPECIAL occasion.

That is a picture of my mom, from back in the day, adoringly staring at a slab of meat (turkey drumstick I think). Possibly talking to it a little bit? I am her daughter.

Why does it have to look like that this month? Why why WHY?

Bought this at Williams-Sonoma this week (thanks Mom for the gift card!). It doubles as a punch bowl! But right now is housing leftover these.

Homemade Nutter Butter Cookies

Put the word "homemade" before a brand name cookie, candy, or really anything and I will try it. Because the majority of the time, it will be better. Maybe not identical, but with the same recognizable flavors on a whole new level of wonderful. Take this peanut butter cookie, that begins with toasting oats in melted butter and fresh vanilla, beans and pod...

Um, hi, right then and there you can claim you are better than the packaged Nutter Butters.

You can claim you are better than anyone in the entire world.

By the by, I bought this yesterday at Williams-Sonoma and it's already changed my life.

The first batch of cookies turned out pretty big, so I left those as plain old glorious peanut butter cookies.

I thinned out the dough for the second batch, and slathered a fat old dollop of peanut butter cream in between the cookies. Nutter Butters, let's run away together...

There are so many different kinds of Valentine's Days.

There's the day where you decorate a glittery mailbox, bring it to school, and hope that everyone included candy with their letter (and secretly hope that cute boy wrote more than just his name). There's the day where you have your first boyfriend, and you spend money you don't have on weird things like a man ring and boxer shorts from Old Navy with lips all over them. There's the day where you're single, and you go out for dinner with all your single girlfriends and make fun of people on awkward first dates and order more than one dessert per person. And there's the day where you and the man you love decide the most romantical thing to do would be to buy each other a new pair of sweatpants.

What kind of day are you going to have??

No matter what, I hope it involves treats like these.

Minestrone Soup

Do you say "minestrone" or "minestron-eee"? More importantly, what do you think Giada says? You know, because she's super Italian and all and can't say the word spaghetti without morphing into Sophia Loren. Hmmm. It doesn't really matter to me because I love it, with or without an Italian-American accent.

Until last night, I had never attempted to make my own. Naturally, I used a Giada recipe which was simple yet authentic. Pureeing some of the Cannellini beans thickens the broth nicely, and adding the rind from Parmesan cheese gives the soup a wonderful depth of flavor.

I'll leave you with this: what on earth am I doing making hot winter soup on an 80-degree day.

Turkey Meatballs with Whole Wheat Spaghetti

I just wrote like 12 different beginnings to this post and erased them all. I'm having one of those days where you feel completely unoriginal. You know, the days when you go on Pinterest and feel like a complete, utter failure as a domestic human being. Love that site no I don't!

Anyway, at least I got somewhat creative with my regular old spaghetti and meatball dinner last night...

I used this recipe, but tweaked it here and there to make it healthier. Whole wheat pasta, egg whites only, 2% milk instead of whole, and I made my own breadcrumbs by throwing a piece of wheat toast in the food processor. To heighten the flavor of the meatballs I added a few pinches of nutmeg, oregano and garlic powder before rolling them into balls. Red pepper flakes on top of the finished product.

Healthy Schmealthy. This tasted decadent and sinful and we went back for seconds.

Indianapolis Birthday

Birthday Cake

But technically, this is a birthday cake, because that's what the recipe (HERE) was called. Katy and I had great friends visit this weekend from Minnesota. We cooed over babies, reminisced about high school, ate excellent food and enjoyed the ridiculously gorgeous weather. And there was cake. Isn't there always cake? My friend Meghan and I both have early February birthdays, so I made her a cake, and I guess I sort of made it for myself also. Do you think it's embarrassing to make yourself a cake? I don't. I don't want to hear it. Nope, shhh, don't speak. I swear to god, if you start with "Oh look at Siri making something healthy FINALLY, how cute, she's embracing Paula Deen's new lifestyle..." I will go ballistic on you. Because come on, I'm like super mega health-conscious like, the majority of the time with the exception of the REAL majority of the time when I'm not. Ok.

Rubbish aside, this was delicious. Very hearty and comforting. Good for your soul and your waistline. You're welcome.

Lentil and Sausage Stew

(Serves 6-8)

Printable Recipe

2 T olive oil

1 pkg turkey sausage

3 carrots, chopped

1 large onion, diced

4 cloves garlic, minced

1 lb. lentils

1 tsp salt

1 tsp dried sage

1 tsp dried thyme

1/4 tsp black pepper

6 cups chicken or vegetable stock

6 cups chopped kale

Heat 1 T of the oil over medium-high heat in a large pot or dutch oven. Saute sausage for approx. 6 minutes per side, until golden and cooked through. Remove from pan, let cool and then slice. Set aside.

Pour out excess oil from pan, but do not clean - the drippings from the sausage add flavor! Return to stove, and heat remaining T of oil over medium heat. Add onions, carrots and garlic. Saute until soft, about 10 minutes.

Add sausage, lentils, seasonings and stock. Bring to a boil. Cover, reduce heat and let simmer for 20 minutes. Then add chopped kale.

Stir in kale, bring to another boil, cover, reduce heat again, and let simmer for another 10 minutes.

Serve with Parmesan cheese or hot sauce. You might need to add more salt as well : )

I'm going to post something healthy tomorrow. Something with leafy greens and protein and vitamins and minerals. A dish you cook in a pot on a stove and eat in a bowl with a spoon. No oven involved. No chocolate involved. No butter involved. I promise.

But it's Monday, and what good are Mondays if you can't hang on to a tiny bit of the weekend? Ah the weekend, when anything goes like eating cookies and meatball subs and pizza all in one day (is football over yet?).

I stumbled across THIS RECIPE yesterday as I was trying to find an original chocolate chip cookie to make for a football party. Original it was. Not only did it require browning 2 sticks of butter...

...which gave the cookies a subtle nutty, almost caramel-like flavor, but it also required sea salt in the dough and atop the cookies. My new favorite ingredient. If you haven't tried it yet, what are you waiting for??? The weekend??? Don't be a dumbo head.

Well, I DID cook dinner last night if you must know.

I had never made chocolate mousse before, and while there were many steps involved, it was surprisingly easy. I thought I would have no problem finishing off an entire glass of it, but this particular recipe at least is RICH. WOAH. I hate that "woah" is spelled like that.

Perfect thing to make ahead of time if you're having a dinner party. For yourself.

Yesterday, my childhood came rushing back to me in the form of a small, crunchy, sweet snack: Puppy Chow. Do you know Puppy Chow? Did your mom let you shake the bag so that the chocolate and peanut butter coated cereal could have a powdered sugar bath? Did you eat way too much of it in college when parents would send it to their children by the freaking bucket? A co-worker of Carson's sent this home with him, and I attacked it. After I took this picture my head went in that bag. Dangerous, I know.

Corn Flake, Peanut Butter and Chocolate Bars

Let me ask you something. Do you have peanut butter, corn flakes, chocolate chips, sugar and corn syrup in your pantry? Do you have 10 minutes of free time today? Then you should make these.

My favorite kind of recipe is one you can make absent-mindedly, like in between taking down your Christmas tree (finally) and going pee. Yesterday, as I was (sort of) (considering to begin) taking down my Christmas tree I thought, I have to pee, and as I walked to the bathroom I accidentally made these bars on the way. Of course then I went back to disassembling (staring at) the Christmas tree.

Blue Cheese Dressing

When I was a kid, I loved blue cheese dressing. And then I grew up and realized that if I wanted to look like Cindy Crawford... I couldn't eat it. And then I grew up some more and realized that Cindy Crawford is like old now, and I still look nothing like her. So screw it, I'm back to eating blue cheese dressing.

But wait! This dressing is healthy! Gwyneth Paltrow says so! I used her recipe and adapted it slightly by using yogurt instead of sour cream (surprised you didn't think of that Gwyn, hmph) and blue cheese crumbles instead of gorgonzola. It IS blue cheese dressing after all. And it's wonderful.

Blue Cheese Dressing

Slightly adapted from My Father's Daughter

(Makes 1 1/2 cups)

Printable Recipe

1/3 cup nonfat Greek yogurt

1/3 cup low fat mayo

1/2 cup crumbled blue cheese

1/3 cup cold water

1 T plus 1 tsp red wine vinegar

1 shallot, thinly sliced

Big pinch coarse salt

Black pepper

Stir everything together in a small bowl.

A Christmas present from my son, one that can be purchased at Target if you're interested. (Um, can I also be gifted this please??) And, if you're a fan of the end pieces of Brownies, or if you're really into perfect shapes, than you should absolutely own this pan too.

I decided to make Blondies with it - because who doesn't like a cookie that's sort of a brownie.

Carson and I think they should be called Brookies - but I guess blonds have more fun.

I used this recipe and added the chocolate chips. SUPERB.

Orecchiette with Pea Pesto

This is more of a spring dish. I mean, do you want to fight about it? The star is a spring vegetable and it's on the lighter side of pasta dishes. But isn't that what January is about? Eating on the lighter side of dishes? So let's not fight.

This was very, very delicious and extremely easy to make, especially when you think you have no food in your house. Ever since I made Pea Pesto Crostinis, I ALWAYS keep frozen peas in my freezer. And since pine nuts are a staple in my salads, they're always around too. Peas, pine nuts, parmesan, garlic and olive oil - blended. Toss it with pasta, any pasta, and you have dinner. Light dinner! Pasta with no cream, no butter, no cheese sauce - just veggies! I'm healthy!

This time around, I used this recipe for the pea pesto...

And while my son ate it plain, I threw in some roasted cherry tomatoes for myself...

If you make a lot of this, the leftovers are great cold the next day. Add some shredded chicken, tomatoes and you have a pasta salad! Exclamation point!

Cheesy Bread

Are you ever afraid that what you're eating is too healthy?

Of course you're not, you're a normal person, unlike me.

Well the other night, as I made a salad for dinner, I thought to myself,

"Gee Siri, you're awfully close to eating a super nutritious dinner. Don't you think you should do something about that??"

I replied, to myself, "CHEESY BREAD."

This was probably the first thing I ever learned to cook in the oven, Home Ec, 8th grade.

You can throw it together in no time with any type of bread and any kind of cheese.

Perfect compliment to those super nutritious dinners.

Take some soft butter and add minced garlic, sea salt and Italian seasoning. Mash it up.

Place bread on baking sheet, spread butter on top and sprinkle with cheese (I did cheddar and parmesan).

Broil for a few minutes until cheese is melted and bubbly.

Warm Salmon Salad

I'm back!!

Let's start this year off with a BANG people. And by that I mean let's go to the gun range, did you think I meant eat healthy? Oh come on, you know that if you're looking to diet in January, this isn't the place for you. That said, I believe life is all about balance: healthy salad one day, eat a batch of cookies by yourself the next.

After eating out for the majority of 2 weeks, we were looking forward to coming home and eating our usuals for dinner, one of those being grilled salmon. And with the leftovers, I made this fantastic salad - appropriate for dinner or lunch. Here's what I did...

Shred some Romaine lettuce (I like really small pieces), and add some garbanzo beans, hearts of palm, toasted pine nuts and avocado (my standard salad ingredients)...

Toss some frozen corn kernels, sliced cherry tomatoes and capers with a bit of olive oil and place in baking dish, roast at 450 for about 15-20 minutes or until caramelized...

While that is roasting, make Balsamic Lime Vinaigrette (2 T balsamic, 2 T honey or agave nectar, 1 T lime juice, 1/4 cup olive oil, salt and pepper)...

Either grill a few pieces of salmon or slightly warm up your leftovers. Toss everything together with desired amount of dressing. Season to taste with salt and pepper.

Now you're ready to wear shorts in LA.

Christmas Chocolate Chip Cookies

I didn't post anything yesterday, but if you're thinking that means I finally stopped baking Christmas cookies you are DEAD.WRONG. and you don't know me at all.

Carson came up to me the other day and said, "when are you going to bake a regular cookie?"

And I said, "what were those words you just said?"

"You know, not a fancy one from a fancy magazine."

"HOW DARE YOU SAY THIS TO ME. Tomorrow."

So I made regular old chocolate chip cookies. With a twist.

I'M SORRY I CAN'T BE REGULAR.

I made THESE from one of Bobby Flay's throwdowns and they are perfect. You can find muscavado sugar at Whole Foods or fancy grocery stores. I added 1/2 tsp of cinnamon to the dry ingredients for that subtle, holiday flavor. And before baking, I dipped the tops of cookies in red & green sprinkles.

This is as regular as I get people (CARSON).

Vodka with Jalapeno, Basil, Cilantro and Lime

Over the weekend, I went to this fabulous restaurant with even more fabulous friends. (Off the subject but related to the word "fabulous" - did anyone see Kristin Wiig do Kim Cattrall on SNL last week? Amazing.) Most of us ordered their signature cocktail, the Tavern on the Green, which was rum, basil, cilantro, jalapenos and lime. Because I am a mom, I didn't drink 15. And because I am a mom, I decided we should recreate it the next night at home. Project! (If I wasn't a mom I'd pour Kettle in my coffee.)

So I minced up some jalapeno into teeny, tiny pieces (*see note below) and added them to a bottle of vodka. We only had the patience to let it sit for about 30 minutes, but the longer you do I imagine, the better.

In the meantime, I finely chopped some basil and cilantro, let that sit in a bowl of lime juice and whisked it all together with a couple teaspoons of brown sugar.

Lots of ice, lots of jalapeno vodka, a couple spoonfuls of the lime/herb mixture and Fresca for fizz (club soda would work too). Lime for garnish. Holiday straw for adorableness.

*NOTE: Never, ever, under any circumstances in the world use your fingers to get the seeds and ribs out of a jalapeno. You're like, no shit Sherlock, are you slow?? Yes. Yes I am slow. I don't know what I was thinking, but the knife seemed like too much work and I am part cave-woman. It didn't hurt at first. But an hour or so later, the burning. The throbbing. THE BURNING. Every single fingertip, I was ready to cut off. I tried everything: soaking them in milk and sugar, washing them with lemon juice, dish soap, coating them with toothpaste. Only temporary relief. Meditating through the pain was the only thing that helped, and I'm serious, I tried that. And then I drank some more vodka.

Poached Eggs in Tomato Sauce with Chickpeas and Feta

I've been reading through Bon Appetit a lot this month, which you should know by now from my most recent posts, and when I came across this recipe I stopped. It spoke to me. Hi Siri, it said, I am chickpeas, which you like, and feta, which you adore, and tomato sauce, something everyone loves, and poached eggs, which are really healthy and WOULD LOOK GREAT ON YOUR THIGHS RIGHT NOW. That is what it said. It also said, I'm fast and easy. (Slut)

So now you know that I hear voices when I read food magazines, and now you know that this is a great recipe. Vegetarian, robust flavors with Middle Eastern flair, great served with toast or pita, healthy, easy weeknight meal. You can find the recipe HERE.

Chewy Ginger Cookies

If you want to plan an intervention, you can, but I don't think "baking too many Christmas cookies" requires professional help, do you? Maybe. Maybe I think so too. Because on Sunday, I only left the kitchen once and that was to buy a mailbox at a hardware store. Did you know they sell mailboxes at hardware stores? Did you know they're not cheap? What am I even talking about?

THESE COOKIES. They are so good. I wouldn't plan an intervention if you ate all of them in one sitting. And guess what - I didn't even have fresh ginger and they're STILL superb. I rolled mine in sanding sugar before baking for that sparkly effect you see above. This crystalized ginger adds to that too...

Peppermint Meringues

Looky looky what I did! I made something just as pretty as the cover of Bon Appetit.

I don't even know if I care for meringues, honestly, but when I saw the December edition of BA and those pink, swirly, fluffy little puffs of air on the cover, I knew I must make them.

I swear I'm not normally this girly. Oooo, look, matchy matchy!

These were surprisingly easy to make. If you like meringues or pretty things, you should make them.

Ok, now for why I suck at life. I was planning on making 3 different bite-sized appetizers with my ham, but my to-do list (which is taller than me) took over this weekend and I was left with time for only one. HOWEVER! One delicious appetizer...

I was so excited to cook with ham because I think it pairs brilliantly with so many things. I chose a combo of savory and sweet. Spicy mustard, a sweet sticky glaze, tangy cheese and juicy, crunchy fruit with crisped potato bread and FARMER JOHN HAM!

Little sandwiches, perfect to serve at a holiday cocktail party.

Baked Ham, Pear and Gorgonzola Sandwiches

(Makes 9 mini sandwiches, very easy to double or triple)

Printable Recipe

For sandwiches:

Farmer John ham, sliced to desired thickness

1 loaf potato bread

1 T dijon mustard

1 T coarse ground mustard

1 pear

Gorgonzola cheese

For glaze:

1 stick unsalted butter

2 T brown sugar

1 T dry mustard

1 T Worscestershire sauce

Toothpicks

To prepare the glaze, combine butter, brown sugar, dry mustard and worscestershire sauce in a saucepan over medium heat. Whisk until melted, and then bring to a boil. Remove from heat and set aside.

Using a small biscuit or cookie cutter, cut out 18 circles of potato bread (for 9 sandwiches - I'm great at math). You can save the leftover bread for croutons or bread crumbs!

In a small bowl, stir together both dijon and coarse ground mustard.

Place 9 of your bread circles in a 9" baking sheet. Top each circle with mustard and spread with back of spoon.

Cut ham to fit sandwiches, and place on top of mustard.

Cut pear to fit sandwiches, and place on top of ham.

Sprinkle each sandwich with desired amount of gorgonzola cheese. (If you're not a fan, brie or swiss would be nice too).

Place remaining bread on top of each sandwich, and pour glaze over - making sure to cover each.

Bake sandwiches in a 350 degree oven, for 20 minutes covered and then 10 minutes uncovered. Insert a toothpick through each sandwich before removing. Serve warm.

Turkey Meatballs with Basic Tomato Sauce

If you're like me, then you could eat spaghetti and meatballs everyday of your life. And if you're like me, you know you cannot eat spaghetti and meatballs everyday of your life. Until maybe now. Because I found a recipe that you can overeat without the guilt, well, except for the guilt that comes with your inability to exercise any sort of portion control WHATSOEVER.

Here's the recipe. I swear to you, make this for someone who thinks ground turkey is lame, and you will change their mind. Better yet, serve it with spaghetti squash and change the world.

Almond Oat Lace Cookies

I won't lie to your face, though, they weren't exactly fun to make. The dough was crumbly and hard to work with...

...but I was a tiny bit short on butter so that might have been why.

Coconut Macaroons

Do you know how easy it is to make Coconut Macaroons? Of course you do not, because up until yesterday I didn't either and I know what you know. We know all of the same things. Obviously you know how I can fold up my ear and get it stuck in my ear socket, obviously. And I know how you secretly watch that one reality show. See? We know everything about each other.

Back to how we both didn't know how easy coconut macaroons were until we found THIS recipe. Four ingredients, no time at all BUT, IMPORTANT TIP: do NOT over-fold the egg whites. Gently incorporate them into the coconut mixture, even to the point where you still see chunks of the egg whites throughout. If you over-fold, your cookies will come out flat. But you knew that, because I knew that.

Baked Sweet Potato Fries

UH OH, HEALTH KICK SIRI TIME. That's a lie, I'm baking cookies later. WATCH OUT, NUTRITION, HERE I COME! No seriously, coconut macaroons. WHY HELLO THERE, SLENDER FIGURE, LOOK AT YOU!!! I think my love handle just gave birth to a love handle. MMM, BAKED SWEET POTATO FRIES... FULL OF VITAMINS AND MINERALS. They're still called "fries" you freaking idiot.

Whatever, these are baked, they're a vegetable, they have the perfect balance of salt, spice and sweetness, and they're delicious. Here's what you do...

Preheat oven to 450. Buy the sweet potato spears in a baggie, or cut your own to 1/4 inch fries. Throw them in a bowl and toss them with olive oil, paprika, salt, garlic powder and a pinch of sugar - all to taste. Bake for 20-30 minutes, until they're crispy. Eat up!

Cranberry Pistachio Pudding Cookies

'Tis the Season to reach out to your neighbors, bake them cookies, and then make fun of them on your blog. Oh I'm ONLY KIDDING. Besides, I was just going to make a joke about their names but now I WON'T because you are making such a fuss about it Marge, Earl, Merv... that's THREE different neighbors WHAT? They don't read blogs! The word isn't even in the dictionary yet, they don't know what it means.

Anyway, back to the Season and goodwill and what not. I got the idea for these cookies on Pinterest, and then adapted them from this recipe. Easy as pie, and so festive, just look at the bursting red and green colors...

No really, those are cranberries, they're red. Ok they're organic so they sort of look black but the IDEA was there. By the way, I wouldn't be mad at you if you decided to put chocolate chips in these. Not mad at all.

Cranberry Pistachio Pudding Cookies

(Makes about 16 cookies)

Printable Recipe

1 cup flour

1 pkg. instant pistachio pudding mix

1 stick butter, softened

1/2 cup brown sugar

1 tsp baking soda

1 large egg plus 1 large egg white

2 cups dried cranberries

Preheat oven to 350. In a small bowl, whisk together flour and pudding mix. In a larger bowl with an electric mixer, beat butter, brown sugar and baking soda until smooth and creamy. Add egg and egg white and continue to beat until incorporated (it might look runny). Slowly mix in dry ingredients. Add cranberries and stir. Drop cookies onto parchment-lined baking sheet, two inches apart, and bake for 8-10 minutes. Let cool.

Couscous with Kale and Mushrooms

Guess what?

I LOVE KALE!!!

I bet you were starting to worry about me and my sugar-fat-calorie intake. Because I love that too, probably more than kale, but I digress... we're talking about green, leafy things rich in vitamins and minerals!! KALE! If you're thinking, "Ew, Siri, that is way too green for me, and bitter, and trendy" well, than I say to you, "green is pretty, it's only bitter if you prepare it wrong and yes, it is trendy, but let's be cool people."

Last night I chopped up some mushrooms into teeny, tiny pieces, sauteed them in olive oil...

...chopped up kale in teeny, tiny pieces and let them wilt with the mushrooms...

...added one tablespoon of butter, one teaspoon of soy sauce and salt and pepper to taste, and then tossed it with a box of couscous. The earthy mushrooms and the salty soy balance out the kale, and the small amount of butter adds depth and deliciousness and butter.

You should try it, I'll be back to cookies soon.

You guessed it, I'm going mental. Because I hear the sound of Christmas Cookie season, right around the corner. Just around the river bend. If you could see me right now, I look like a cross between that freaky Target lady and a gerbil (I need to shower).

These cookies are like sugar cookies but with brown sugar instead, which adds depth and richness. There is also a hint of spice, thanks to the cinnamon and ginger. THANKS BE TO THE SEASON!

Catherine's Cornballs with Apple Cream Topping

I received a lot of fried or pan-fried corn cakes of various sorts and honestly, they all looked fabulous (Aunt Pam, Gretchen, Sara - I die). But something about this one hooked me. I can almost taste the crispiness just looking at this photo, and an apple cream cheese topping? Yes. (Catherine's blog)

Larry's Corn, Maple & Walnut Spiced Bread Bites

I did a double take after looking at this recipe. I read "bread bite" and assumed this was a crostini of sorts but no, it's a bunch of wonderful fall flavors mixed together and baked in a mini muffin tin. Creative! The sliver of spicy jalapeno on top combined with the sweet, cider, maple syrup dipping sauce seems like such a great contrast of flavor - I'm dying to try.

p.s. If you don't have a ceramic Japanese spoon I'm sure it will still be good. (Oh Larry...)

Kathryn's Corn Cheddar Ravioli in an Apple Cider Sauce

This one fell into my top 3 almost instantly. The name of the dish and the picture was almost all it took. I was very excited to see the crispy sage/bread crumb topping, and of course ground sage throughout. Cooked apples and onions, swimming in the buttery cider sauce, spooned over cheesy, corn ravioli - I would order that in a restaurant.

So there you have it. I will be making all three of these tonight and tomorrow (sucks to be me), myself and my two co-judges (Jack and Carson) will test taste until we explode, and I will announce the winner on Wednesday!

Easy Tomato & White Wine Sauce

Nothing makes you feel more like a great cook than whipping up an easy, delicious and versatile sauce. Weird, I sound so serious, like a walking advertisement.

Farts.

That's more like me. Back to being a great cook and mature adult.

I served this sauce over poached fish and it felt like I was indulging in something rich and sinful when, in fact, it was very vibrant and light (I know, healthy...again, unlike me). Here's how to do it...

**Melt 2 tablespoons of butter over medium-low heat. Add a finely chopped shallot, and saute until translucent. Add one clove of minced garlic, and saute for another 5 minutes or so, to really let the flavors mesh. Add one cup of white wine and one can of diced tomatoes (14oz), bring to a boil. Let boil for a hot second, and then bring down to a simmer for 20 minutes or so. Let it thicken up. Season with salt and pepper.**

Mmm.

Crispy Fried Apple Rings

Oh my god, oh my god, oh my god, oh my god. I am a chocolate person. A creamy, rich, dark, chocolaty dessert will always win over something fruity in my book. And then came these. Which I found HERE. Which are NOT called "Crispy Fried Apple Rings" but that's what they are to me. A crispy, sugary, slightly spiced exterior around a tart, juicy cooked apple - best served right of of the fryer. Would be perfection dipped in ice cream. Or chocolate? (By the way, yes that's a beer in the photo below.)

4 Thanksgiving-themed ingredients.

Ok, now for the QUESTION. Do you guys watch the Food Network show Chopped? Chefs are given a basket of random ingredients, and they have to make something out of them. 3 people lose, one person wins. Do you know it? Ok, but that wasn't the question...

Homemade Almond Joys

As a kid, you didn't like Almond Joys, did you? They had almonds in them, ew, and something called coconut, which just sounded gross because it had the word "nut" in it. Besides, your mom loved them, so you knew they were "adult candies" that were best paired with wine.

Am I just talking about my childhood? Ok. I feel so alone.

Anyway, I did NOT care for these as a kid and now I adore them. And I say words like "adore" when referring to food, because I'm a giant, grown-up food nerd.

Found this recipe online and it's super (so is the blog) - tastes JUST like the candy bar if not better.

There is never a time when I do not want to swim in chocolate.

Everyone has a role, and mine is usually to take full control. See that picture up there? Don't I look happy and thankful? Nope. That smile is a manic one... a panicked, "everything-will-be-fine-if-I-show-teeth-like-Giada" shit-eating grin. That's what happens to me when I try to do too much. So this year, I've decided to do next to nothing and let someone else take over. Teach me how to watch football please (I already know how to scratch my balls).

Fall Salad

My friend Katy introduced me to the BEST.SALAD.EVER. She made it this past weekend while our moms were in town visiting, and because I spaced and didn't take pictures of it, I decided I had to remake it. Of course I didn't have any of the right ingredients for the salad, but for the dressing I was set. Balsamic vinegar, dijon mustard, chopped shallots, olive oil and maple syrup. I could bathe in the stuff. Why is there an 'E' at the end of bathe? I hate that. Recipe found here.

Texas Beef Brisket Chili

Do you like beans in your chili? I do, but I know some people do not. This weekend I tried out a bean-less recipe. If you can find anything wrong with chunks of melt-in-your-mouth beef brisket, sweet butternut squash and all sorts of bold, spicy flavors - then you are not well.

I think my favorite part of making chili (other than cooking it slowly all day long and making your house smell like love) is choosing your toppings...

It's like a savory, macho frozen yogurt bar. I loved this recipe (found HERE) and you will too. It served almost 10 people and we have leftovers for days. Perfect recipe to spend a rainy day weekend with.

Leeks Vinaigrette

Good morning. Have you noticed it's a new world out there? A world where 6:45am has become 5:45am - the new "Wake Up Time" for my two-year-old. Where 60 degrees is the new 80 degrees, and my boots and sweaters are back in play. Where society starts to make us feel guilty because we're not ready for Christmas yet (dude, poor Thanksgiving). And a world where leeks are braised and the star of their own dish.

I love leeks, but I've only experienced them finely chopped in soups or sauces, their flavor resting subtly in the background. When I saw this recipe in Bon Appetit, I was very curious. Leeks braised in wine and chicken stock, tossed in a mustardy vinaigrette and sprinkled with hard-boiled eggs. Yum. The flavor was delicious, although the stringy texture of the leeks was something to get used to. Still, I think this is a nice fall side that would compliment chicken or fish nicely.

Chocolate Chip Scones

I've never been much of a scone lover (though I won't pretend I haven't occasionally devoured a 5,000-calorie Maple Oat Nut Scone from Starbucks). But a reader friend recently sent me a recipe, and while I didn't have all the ingredients on hand to make the specific one she sent, it stirred my interest. T'would be quite lovely if I had a go at baking some scones!, I thought to myself in a British accent. (Am I mistaken, or are you always supposed to speak and think thoughts in a fake British accent when dealing with scones??) And what DID I have on hand? Chocolate chips. Oh yes, those are always on hand.

I found this recipe, and quite enjoyed the addition of lemon zest it called for. (Fake British Accent Tip: say "quite" a lot.) They turned out great. Perfect for breakfast with tea and crumpets. What the hell is a crumpet, by the by.
