Rigatoni with Tuna
I very rarely cook for only myself. Last night, however, I was home alone with my toddler which meant I was going to eat leftover hot dog off the floor for dinner or I was going to have to come up with something quick and easy. Pantry Dinner! Luckily, my pantry was recently stocked by the kind people over at Wild Planet Foods. Check out that sustainably caught salmon and tuna! I've been dying to try it, and in a form other than tuna salad.
So last night I sauteed some garlic, shallots and capers in olive oil. Added a little butter and white wine...
Threw in some leftover mushrooms and the wild albacore tuna...
And tossed in some al dente rigatoni, salt and pepper, parmesan...
This was the best canned tuna I've ever had. And I'm not just saying that because they sent it to me for free.
Oh, and if you're wondering how I managed to cook, alone, with a toddler, it's because I'm a terrible mother:

ReplyDeleteI don't have kids, but I think sitting them in front of the tv while you cook is a very acceptable practice :) At least you aren't locking him in a closet or something!
