Grilled Panzanella
I like to copy people. You know, steal their look, their term papers, their ideas. If you read my blog, then you know I'm a major Ina Garten wannabe, and recently I hit the copy cat jackpot. I was able to copy both Ina AND a good friend of mine. She writes a lovely blog and cooked a lovely meal the other night, one of Ina's, and so I copied them!
Panzanella, sometimes thought of as a "leftover salad" according to Wikipedia. Day-old bread and any veggie you can find in your fridge, soaked in a garlic dressing... amazing. I loosely followed Ina's recipe here. Didn't have capers so I used green olives, didn't have peppers so I used zucchini and carrots. Added sugar snap peas, avocado and mozzarella because I do what I want. Instead of putting bread in the salad I served it along side toast and a poached egg.

I LOVE Ina's Panzanella! It is my favorite summer side..I love it because of the bread croutons..YUM.

ReplyDeleteLooks deLISH! The panzanella bug must be going around. We always get in Stillwater at our new fave restaurant so tried to copy. Made ours with haricot verts, avocado, cucumbers, feta, garbanzo beans, heirloom tomatoes, green olives, red onion, and pita bread. Made a dressing of garlic, balsamic, miracle whip. HA! But it was AMAZING. I heart chopped salads.
