Miso Roasted Shrimp with Stir Fry Vegetables
Have you ever roasted shrimp? Drop what you're doing RIGHT NOW and try it. Yes, I know you might be at work or feeding your child or enjoying a summer activity but I don't care. This is too important. Go buy some shrimp and roast it. It's incredible! It's fast, and easy, and it cooks the shrimp P E R F E C T L Y. I've seen Ina do it, and recently a fellow food blogger gave it a try and that pushed me over the edge. I hope I do the same for you. It will change your life. Your welcome.
Miso Roasted Shrimp with Stir Fry Vegetables
(Serves 2)

1/2 pound raw shrimp
3 T lime juice
3 T yellow miso
2 T vegetable oil
1 T brown sugar
1 tsp soy sauce
1 tsp Sriracha
1 large garlic clove, minced
1 T minced ginger
1 bag stir fry veggies
1/2 cup sliced mushrooms
1 T olive oil
1 tsp sesame oil
Salt and pepper
In a bowl, whisk together lime juice, miso, vegetable oil, brown sugar, soy sauce, Sriracha, garlic and ginger. Set aside 1/3 cup of marinade in small bowl. Clean and devein shrimp (if necessary) and add to marinade. Let sit in fridge for 15-30 minutes.
Heat olive oil and sesame oil in skillet over medium heat. Add stir fry veggies and mushrooms and saute for a few minutes. Add the remaining marinade and saute for another 8-10 minutes. Season with salt and pepper.
Preheat oven to 400. Arrange shrimp on a baking sheet.
Bake for 5 minutes. Do not overcook!
Serve over brown rice with vegetables.

I LOVE all those ingredients! Can not go wrong...brown sugar, soy, miso! <--been using a lot of miso recently, adds such depth to dishes - the roasting is perfect too! The miso I found was a little $$ but worth it!

I am making this asap. Can I use white miso? I think that's what I have, "shiro miso", same thing?
